My three favorite condiments! I don't think pesto gets enough credit as a condiment, though. My Sicilian grandfather used to put it on almost everything- sandwiches, salads, hamburgers (both in the ground beef before cooking and on the bun), crackers, toast, and pasta, of course. He made a huge batch by hand every summer after harvesting his basil garden, and then he passed out portions to the family and froze the rest in plastic bags to use all year. I don't have a basil garden yet, so I haven't been able to make my own, but I have found Alessi to be the best store brand available to get an authentic taste. If you can't find it at your store, here are some qualifications you should look for. Ingredients: basil, extra virgin olive oil, pine nuts (I've seen cashews and pecans used and it tastes really weird to me), a dry cheese (usually Parmesan, but I've seen Romano as well and they're both good), and as little else as possible. I have seen other brands using different spices and adding fillers like *gasp* potato flakes, and those never taste right.

Weird that this tweak came today. I just finished reading a story last night in Malcolm Gladwell's new book, "What the Dog Saw" about how mustard has diversified, yet Heinz Ketchup is still (in the US at least) the only major player in the ketchup world. Who knew condiments could be so interesting?
