Speculaas (or speculoos or 'Dutch windmill cookies') are a delightfully moreish spicy biscuit sensation. They are crunchy, perfect with a cup of tea or hot chocolate and not too sweet; the almond flakes on the back add a gentle nutty richness to the bold spice and the charming designs with elaborate details make them appealing to all ages (Windmills, elephants, chickens).
